Your best bet is to focus on the larger reservoirs and lakes in the area, such as Norfork Lake (though primarily in Arkansas, portions extend into Missouri). These bodies of water can hold some surprisingly large pike, though they aren't as abundant as in more northern climates. Spring, just after ice-out (if applicable), and fall are the most productive times, as pike move into shallower water to spawn and feed before winter. Look for weedy bays and submerged timber – classic pike ambush points. A local tip: use large, flashy lures or swimbaits to attract attention in the often-murky waters. Be prepared for a tough fight, as these Ozark pike can be strong. Also, consider using a wire leader, as their teeth are sharp!
